🍟 Cheesy Chicken Loaded Fries — Teriyaki & Jalapeño

Ingredients

For the fries

  • 500 g frozen French fries
  • 1 tbsp oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt, to taste

For the teriyaki chicken

  • 300 g boneless chicken breast or thigh, cut into small bite-sized pieces
  • 1 tbsp oil
  • 3 tbsp teriyaki sauce
  • 1 tbsp soy sauce
  • 1 tsp honey or brown sugar
  • ½ tsp garlic powder
  • ½ tsp ginger powder
  • 1 small jalapeño, finely sliced
  • 1 tbsp water

For the cheese topping

  • 1 cup shredded mozzarella
  • ½ cup shredded cheddar
  • 2–3 tbsp sliced jalapeños, fresh or pickled
  • 2 tbsp chopped spring onions

Optional creamy drizzle

  • 3 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp sweet chili sauce
  • 1 tsp sriracha or hot sauce
  • 1–2 tsp water to thin it

Step 1 — Make the fries

  1. Preheat your oven or air fryer.
    • Oven: 220°C
    • Air fryer: 200°C
  2. Place the fries in a bowl and toss with:
    • 1 tbsp oil
    • garlic powder
    • paprika
    • a little salt.
  3. Spread them out in a single layer. Don’t overcrowd them, otherwise they can become soft instead of crispy.
  4. Cook until deep golden and crispy.
    • Oven: roughly 25–35 minutes, turning halfway.
    • Air fryer: roughly 15–20 minutes, shaking halfway.

The fries should be extra crispy because they’ll have sauce and cheese added later.


Step 2 — Prepare the teriyaki chicken

  1. Cut the chicken into small bite-sized pieces. Smaller pieces work best for loaded fries because you want chicken in almost every bite.
  2. Heat 1 tbsp oil in a frying pan over medium-high heat.
  3. Add the chicken in a single layer.
  4. Cook for about 5–7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  5. Add:
    • 3 tbsp teriyaki sauce
    • 1 tbsp soy sauce
    • 1 tsp honey/brown sugar
    • garlic powder
    • ginger powder
    • 1 tbsp water.
  6. Stir everything together and let it bubble for 1–2 minutes.
  7. Add your sliced jalapeños.
  8. Continue cooking for another 1–2 minutes, allowing the sauce to become thick and glossy.

You want the chicken coated in a sticky, sweet-salty teriyaki glaze, not swimming in liquid.


Step 3 — Make the creamy sauce

Mix together:

  • 3 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp sweet chili sauce
  • 1 tsp sriracha/hot sauce.

Add a teaspoon or two of water if it’s too thick.

Taste it and adjust:

  • More sriracha → hotter
  • More sweet chili → sweeter
  • More mayo → creamier

Step 4 — Build the loaded fries

This is where it gets really good.

  1. Put your crispy fries onto a large oven-safe plate, skillet, or baking tray.
  2. Sprinkle ½ of the mozzarella and cheddar over the fries.
  3. Add the teriyaki chicken evenly across the top.
  4. Add sliced jalapeños.
  5. Cover with the remaining mozzarella and cheddar.
  6. Place under a hot grill/broiler or back into the oven for about 2–4 minutes, just until the cheese is completely melted and bubbling.

Don’t leave it too long—the fries can become soggy.


Step 5 — Finish the loaded fries

Take them out while the cheese is still bubbling.

Drizzle over the creamy spicy sauce.

Then add:

  • chopped spring onions
  • a few extra jalapeños
  • a little extra teriyaki sauce, if desired
  • optional sesame seeds for a restaurant-style finish.

🔥 The final result

You should have crispy golden fries on the bottom, covered with gooey melted mozzarella and cheddar, followed by sticky sweet-and-savory teriyaki chicken, spicy jalapeños, and a creamy, slightly spicy drizzle.

The combination is especially good because you get crunchy + cheesy + sweet + salty + spicy + creamy in every bite.

⭐ Pro tip

For the best loaded fries, don’t pour the teriyaki sauce directly over all the fries. Keep most of the sauce coating the chicken. Too much liquid underneath will make the fries soggy. Add the chicken, cheese, and toppings, then drizzle sauces lightly over the finished dish.
