  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon soy sauce

For the stir-fry

  • 3 large carrots, peeled and cut into thin matchsticks or diagonal slices
  • 1 bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, finely minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons cooking oil, divided
  • 2–3 green onions, sliced
  • 1 tablespoon sesame seeds, optional

  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 3 tablespoons water

Optional: Add ½ teaspoon red pepper flakes if you want the stir-fry extra spicy.

1. Prepare the chicken

Cut the chicken into small, thin bite-sized pieces. Keeping the pieces relatively small helps them cook quickly and stay tender.

Place the chicken in a bowl and add:

  • Garlic powder
  • Salt
  • Black pepper
  • Soy sauce
  • Lime juice

9. Finish the stir-fry

Turn off the heat.

Finish with a squeeze of fresh lime juice.
