Ingredients
For the chicken:
- 250–300 g boneless chicken breast or thighs
- 1 tbsp oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- 3 tbsp Buffalo sauce
- 1 tbsp butter
For the creamy mixture:
- 3 tbsp cream cheese
- 2 tbsp milk
- 1 tbsp Buffalo sauce
- ½ tsp garlic powder
- Pinch of black pepper
For the bowl:
- 3–4 eggs
- 1½ cups cooked potatoes, diced
- ½ cup shredded cheddar or mozzarella
- ½ avocado, sliced
- 2 tbsp chopped green onions
- 1–2 tbsp ranch or blue-cheese dressing
- Fresh cilantro or parsley, optional
- Extra Buffalo sauce, to taste
Step-by-step
1. Prepare the chicken
Cut the chicken into small bite-sized pieces. Pat it dry with a paper towel so it browns nicely.
Season with salt, black pepper, garlic powder, and paprika. Toss well so every piece is coated.
2. Cook the chicken
Heat 1 tablespoon of oil in a skillet over medium-high heat.
Add the chicken in a single layer. Cook for about 5–7 minutes, stirring occasionally, until golden brown and cooked through.
Add 1 tablespoon butter and 3 tablespoons Buffalo sauce.
Stir everything together and cook for another 1–2 minutes, allowing the Buffalo sauce to coat the chicken and become glossy.
Remove the chicken from the pan and set aside.
3. Make the crispy potatoes
Use cooked potatoes and cut them into small cubes.
Add them to the same skillet. Cook over medium-high heat for 5–8 minutes, turning occasionally, until the outside becomes golden and crispy.
For extra flavor, season with a little salt, pepper, paprika, and garlic powder.
4. Make the cream-cheese Buffalo sauce
In a small saucepan or microwave-safe bowl, combine:
- 3 tbsp cream cheese
- 2 tbsp milk
- 1 tbsp Buffalo sauce
- ½ tsp garlic powder
- A little black pepper
Heat gently and stir until completely smooth and creamy.
If it’s too thick, add another splash of milk. You want a silky sauce that easily drizzles over the bowl.
5. Cook the eggs
Heat a clean skillet over medium-low heat.
Whisk the eggs with a pinch of salt and pepper.
Cook slowly, stirring gently, until they’re just set but still soft and slightly creamy. Don’t overcook them—the soft eggs help make the whole bowl juicy.
6. Build the bowl
Start with a layer of crispy potatoes.
Add the creamy scrambled eggs.
Pile the Buffalo chicken on top.
Add shredded cheddar or mozzarella while everything is hot so it starts melting.
Add sliced avocado and chopped green onions.
7. Add the creamy Buffalo finish
Drizzle the warm cream-cheese Buffalo sauce generously over the chicken and eggs.
Finish with ranch or blue-cheese dressing and another drizzle of Buffalo sauce.
Top with fresh cilantro or parsley if you like.
