Easy Birria Nachos With Melted Cheese
🧀 Easy Birria Nachos
Serves: 4–6
Prep time: 15 minutes
Cook time: 10–15 minutes
Total time: About 30 minutes, assuming you already have cooked birria
Ingredients
For the nachos:
- 1 large bag tortilla chips
- 2–3 cups cooked birria beef, shredded
- 2 cups shredded Oaxaca, Monterey Jack, or mozzarella cheese
- ½ cup diced white onion
- ¼ cup chopped fresh cilantro
- 1–2 jalapeños, thinly sliced
- 1 avocado, diced
- ½ cup Mexican crema or sour cream
- 1 lime, cut into wedges
For serving:
- 1–2 cups warm birria consommé
- Extra cilantro and onion
- Lime wedges
- Your favorite salsa
Step-by-Step
1. Preheat the oven
Preheat your oven to 400°F (200°C).
Line a large baking sheet with parchment paper or foil. This makes cleanup much easier.
2. Prepare the birria
If your birria is refrigerated, warm it in a skillet over medium heat.
Shred the beef into small, bite-sized pieces. Add a few spoonfuls of consommé to the meat so it stays juicy and flavorful.
Don’t add too much liquid—the meat should be moist but not dripping wet, otherwise your nachos can become soggy.
3. Build the first layer
Spread a layer of tortilla chips evenly across the baking sheet.
Try to avoid putting all the chips in one huge pile. A relatively even layer helps ensure that every chip gets some toppings.
Sprinkle about half of the shredded birria over the chips.
4. Add plenty of cheese
Sprinkle half of your shredded cheese over the birria.
Oaxaca cheese is especially delicious because it melts beautifully, but Monterey Jack or mozzarella work great too.
5. Add another layer
Add another layer of tortilla chips on top.
Then add the remaining birria and finish with the rest of the cheese.
This double-layer method is important because it gives you cheese and birria throughout the nachos, rather than having all the toppings sitting on top.
6. Bake
Place the baking sheet in the preheated oven.
Bake for approximately 8–12 minutes, or until:
- The cheese is completely melted.
- The edges of the chips are lightly toasted.
- The birria is hot.
For extra bubbly, browned cheese, switch to broil for 1–2 minutes at the end. Watch it closely because cheese can burn very quickly under the broiler.
7. Add the fresh toppings
Remove the nachos from the oven and immediately add:
- Diced onion
- Fresh cilantro
- Sliced jalapeños
- Diced avocado
Drizzle with Mexican crema or sour cream.
Finish with a squeeze of fresh lime juice.
8. Warm the consommé
While the nachos are baking, heat your birria consommé in a small saucepan over medium-low heat until hot.
Pour it into small bowls or ramekins for dipping.
9. Serve immediately
Serve the nachos while they’re hot and the cheese is still stretchy and melted.
Take a crunchy chip loaded with birria, cheese, onion, and jalapeño, then dip it into the warm consommé.
🌶️ Easy Topping Ideas
You can customize your nachos with:

- Pickled jalapeños

⭐ Tips for the Best Birria Nachos
Don’t overload the chips. Too many toppings can make them soggy.
Use freshly shredded cheese. It generally melts better than pre-shredded cheese.
Keep the birria juicy. A little consommé mixed into the shredded beef gives you much better flavor.
Make two layers. This ensures the bottom chips aren’t plain while all the toppings sit on top.
Serve immediately. Nachos are at their best straight from the oven.
Keep the consommé separate. Instead of pouring it over the nachos, use it as a dipping sauce so the chips remain crispy.
🔥 Quick Shortcut
If you already have leftover birria, this recipe becomes extremely easy:
Chips → birria → cheese → chips → birria → cheese → bake → fresh toppings → crema + lime → consommé for dipping.
That’s it! You get crispy, cheesy birria nachos in about 15 minutes once your birria is ready.
