Spicy Korean-style chicken and pepper jack chicken quesadilla

Ingredients

For the Korean-style chicken:

  • 500 g boneless, skinless chicken thighs or breast
  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 cloves garlic, finely minced
  • 1 tsp grated fresh ginger
  • ½ tsp Korean chili flakes (gochugaru), optional
  • ½ tsp black pepper
  • 1 tbsp cooking oil

For the quesadilla:

  • 4 large flour tortillas
  • 1½–2 cups shredded mozzarella or Monterey Jack cheese
  • ½ cup shredded cheddar
  • ½ small red onion, thinly sliced
  • ½ cup cabbage, finely shredded
  • 2 green onions, sliced
  • 1 tbsp sesame seeds
  • 1 tbsp cooking oil or butter

Optional spicy sauce:

  • 3 tbsp mayonnaise
  • 1 tbsp gochujang
  • 1 tsp honey
  • 1 tsp lime juice

Step 1 — Marinate the chicken

Cut the chicken into small, bite-sized pieces.

In a bowl, combine:

  • Gochujang
  • Soy sauce
  • Honey
  • Sesame oil
  • Rice vinegar
  • Garlic
  • Ginger
  • Gochugaru
  • Black pepper

Add the chicken and mix thoroughly until every piece is coated.

Cover and marinate for 30 minutes, or preferably 2–4 hours in the refrigerator.

Step 2 — Cook the chicken

Heat 1 tbsp oil in a large skillet over medium-high heat.

Add the marinated chicken in a single layer. Cook for about 4–5 minutes, then stir and continue cooking for another 4–6 minutes.

The chicken should be:

  • Fully cooked
  • Slightly caramelized
  • Sticky and glossy
  • A little charred around the edges

Remove from the pan and allow it to rest for a few minutes.

Then chop it into smaller pieces if necessary.

Step 3 — Prepare the spicy sauce

Mix mayonnaise, gochujang, honey, and lime juice in a small bowl.

Taste and adjust:

  • More gochujang → spicier
  • More honey → sweeter
  • More lime → tangier

Step 4 — Assemble the quesadilla

Place one tortilla on a clean surface.

Spread a thin layer of the spicy sauce over half of the tortilla.

Add:

  1. Shredded mozzarella/Monterey Jack
  2. Korean chicken
  3. Red onion
  4. Shredded cabbage
  5. Green onion
  6. A little more cheese
  7. Sesame seeds

Fold the tortilla in half.

Tip: Don’t overfill it. Too much filling makes the quesadilla difficult to flip and causes the cheese to spill out.

Step 5 — Cook the quesadilla

Heat a clean skillet over medium heat.

Add a small amount of butter or oil.

Place the folded quesadilla in the pan.

Cook for approximately 2–3 minutes per side, pressing gently with a spatula.

You’re looking for:

  • Golden-brown tortilla
  • Crispy edges
  • Completely melted cheese
  • Hot filling

Flip carefully and cook the second side.

Step 6 — Slice and serve

Transfer to a cutting board and rest for about 1 minute.

Cut into 3–4 wedges.

Top with:

  • Green onions
  • Sesame seeds
  • Spicy mayo
  • A little shredded cabbage

  • ½ tsp onion powder
  • ½ tsp cumin
  • ½ tsp black pepper
  • ½ tsp salt
  • ½ tsp cayenne pepper, optional
  • 1 tbsp lime juice

For the quesadilla:

  • 4 large flour tortillas
  • 1½–2 cups shredded pepper Jack cheese
  • ½ cup shredded cheddar cheese
  • ½ small onion, thinly sliced
  • ½ bell pepper, thinly sliced
  • 1 small jalapeño, thinly sliced
  • 2 green onions, chopped
  • 1 tbsp butter or cooking oil

Optional additions:

  • Corn
  • Black beans
  • Avocado
  • Fresh cilantro
  • Pickled jalapeños

Step 1 — Season the chicken

Cut the chicken into small pieces.

Combine:

  • Smoked paprika
  • Chili powder
  • Garlic powder
  • Onion powder
  • Cumin
  • Black pepper
  • Salt
  • Cayenne

Add olive oil and lime juice, then toss the chicken thoroughly with the seasoning.

Let it sit for 15–30 minutes.

Step 2 — Cook the chicken

Heat a skillet over medium-high heat.

Add the seasoned chicken.

Cook for approximately 8–10 minutes, stirring occasionally, until the chicken is completely cooked and lightly browned.

Allow it to rest for a few minutes, then chop into small pieces.

Step 3 — Cook the vegetables

Using the same skillet, add the sliced onion and bell pepper.

Add the jalapeño and cook for another 1 minute.

Lay a tortilla flat.

Cover half of it with pepper Jack cheese.

Add:

  • Cooked chicken
  • Sautéed onion
  • Bell pepper
  • Jalapeño
  • Green onion
  • Cheddar

Add another small layer of pepper Jack on top.

Fold the tortilla over.

Step 5 — Toast the quesadilla

Heat a skillet over medium heat.

Add a small amount of butter or oil.

Place the quesadilla into the skillet.

Cook for 2–3 minutes until the bottom becomes golden and crispy.

Carefully flip it.

Cook another 2–3 minutes until the second side is golden and the cheese has completely melted.

Step 6 — Rest and cut

Remove from the skillet and allow it to rest for 1 minute.

Cut into wedges.

Serve immediately with:

  • Sour cream
  • Salsa
  • Guacamole
  • Jalapeños
  • Fresh cilantro

🔥 Chef’s trick for extra-crispy quesadillas

For either recipe, keep the skillet at medium rather than high heat. High heat can burn the tortilla before the cheese melts.

For an especially crispy finish:

  1. Brush the outside of the tortilla very lightly with butter or oil.
  2. Cook on medium heat.
  3. Don’t move the quesadilla for the first 2 minutes.
  4. Flip once.
  5. Press gently with a spatula.
  6. Remove when both sides are golden brown and the cheese is fully melted.

Best cheese combination: For maximum stretch and flavor, use pepper Jack + Monterey Jack/mozzarella rather than pepper Jack alone.
